\n\tActively share ideas,\u00a0opinion\u00a0and suggestions to improve the environment and menus\u00a0
\n\tEnsure consistency in the preparation of all Butchery items for a la carte and\/or buffet menus according to property recipes and standards\u00a0
\n\tCommunicate effectively with the rest of the team and thrive for guest feedback.\u00a0
\n\tMaintain cleanliness and proper rotation of product in Butcher chillers\u00a0
\n\tMinimize wastage\/ spoilage\u00a0\u00a0
\n\tDaily attendance at BEO\u00a0meeting\u00a0and proper distribution & adjustments to culinary BEOs.\u00a0
\n\tLiaison daily with Outlet Chefs to keep open lines of communication & guest feedback\u00a0
\n\tStrives to\u00a0maintain\u00a0& improve all Colleague cafeteria food offerings, preparations & presentations\u00a0
\n\tPersonally inspect all Butchery items entering Fairmont the Norfolk for quality & hygiene standards\u00a0
\n\tEnsures proper\u00a0portion\u00a0control to minimize wastage in the Butcher Shop\u00a0
\n\tComplete daily Meat, Fish & Poultry market lists based on hotel volume\u00a0
\n\tEnsure daily rotation of all Butchery items from the outlets to\u00a0maintain\u00a0quality\u00a0
\n\tLiaison with purchaser to communicate quality for money ratio\u00a0
\n\tMaintain consistency for all items leaving the Butcher Shop\u00a0
\n\tYield testing of all products\u00a0
\n\tKeep inventory of red meats to ensure proper aging of meats\u00a0
\n\tPerforms any other reasonable duties as required by the department head\u00a0
\n\tEnsure storeroom requisitions are\u00a0accurate\u00a0to minimize repeat visits\u00a0<\/p>\n
Qualifications<\/p>\n
\tReading,\u00a0writing\u00a0and oral\u00a0proficiency\u00a0in the English language.\u00a0
\n\tHigh School and culinary school training.\u00a0
\n\tHACCAP knowledge.\u00a0
\n\tAbility to work well under pressure in a\u00a0fast paced\u00a0environment.\u00a0
\n\tAbility to work cohesively as part of a team\u00a0
\n\tAbility to focus attention on guest needs, remaining calm and courteous at all times.\u00a0<\/p>\n
