The role provides accurate cost data to the Accounting & Control team and Department Heads to support daily operations, budgeting, and profit center management. It ensures that materials management systems are properly used, variances are investigated, and corrective actions are implemented.<\/p>\n
Cost Control & Reporting<\/p>\n
\tPrepare daily and monthly cost reports (e.g., Food & Beverage Actual vs Potential).
\n\tProvide cost summaries for financial reporting.
\n\tAnalyze General Stores issues against budget.
\n\tCollate and journalize month-end inventory figures.<\/p>\n
Inventory Management & Audit<\/p>\n
\tAudit inventory transactions and authorize adjustments.
\n\tParticipate in month-end and periodic stocktakes.
\n\tReconcile inventory variances and obtain explanations.
\n\tMaintain records for non-system inventory transactions (banquets, cocktails, buffets).
\n\tMonitor inventory turnover and par stock levels.<\/p>\n
Purchasing & Receiving Control<\/p>\n
\tCompare purchase orders with authorized purchase requests.
\n\tAudit receiving variance reports (price and quantity variances).
\n\tConduct market surveys to ensure competitive pricing.
\n\tSpot check purchase orders against market lists.
\n\tVerify quality of items received against specifications.<\/p>\n
\u00a0Food & Beverage Cost Monitoring<\/p>\n
\tVerify recipes, yield tables, and standard pricing tables.
\n\tCheck portion control and outlet recipe accuracy.
\n\tAudit liquor handling, pouring brands, minibar controls.
\n\tInvestigate spoilage and wastage reports.<\/p>\n
Asset & Equipment Control<\/p>\n
\tMaintain records of Operating Equipment and FF&E.
\n\tCoordinate periodic and annual equipment inventories.
\n\tTrack movement and status of FF&E items.<\/p>\n
Compliance & Systems Control<\/p>\n
\tMonitor accuracy of data entered in Materials Management systems.
\n\tEnsure proper use of units of measure and brand information.
\n\tAudit operating procedures (purchasing, receiving, storing, preparation).
\n\tEnsure compliance with accounting principles.<\/p>\n
\u00a0Training & Supervision<\/p>\n
\tTrain and guide ambassadors in Materials Management procedures.
\n\tSupport team development and operational efficiency.
\n\tSupervise and demonstrate proper processes where required.<\/p>\n
Qualifications<\/p>\n
\tMinimum 5 years of relevant experience in cost control preferably hospitality
\n\tBachelor\u2019s Degree Finance, Accounting, Commerce or related Field.
\n\tExperience in a luxury hotel environment is an added advantage.
\n\tCPA Section 2\u00a0
\n\tKnowledge in Sun System, Opera Cloud, Materials Control & Symphony.
\n\tExcellent organizational and time-management skills
\n\tStrong written and verbal communication skills
\n\tHigh attention to detail and accuracy
\n\tAbility to multitask and work under pressure
\n\tAdvanced proficiency in Microsoft Office (Word, Excel, PowerPoint, Outlook)<\/p>\n
