Education and Experience required:<\/p>\n
\tRelevant tertiary qualification in food and beverage services or culinary arts is compulsory
\n\tMinimum 5 years\u2019 experience of progressive culinary\/kitchen management is compulsory
\n\tExperience working within budget guidelines to deliver results is compulsory<\/p>\n
Knowledge, Skills, and Competencies:<\/p>\n
\tKnowledge of the catering environment ranging from fine dining to restaurant dining
\n\tKnowledge of South African and industry-specific law
\n\tStrong financial acumen, proven budgetary and food control practices<\/p>\n
Key areas of responsibility:<\/p>\n
\tTo develop and plan menus
\n\tEstablish recipes and food purchase specifications
\n\tCoordinate, execute, supervise, and evaluate all food production activities of a fast-paced operation
\n\tAssist in the management of the strategic and day to day operations of the operation<\/p>\n
