The role ensures adherence to airline menu specifications, food safety standards, and production timelines, while driving operational efficiency and team performance.<\/p>\n<p>Principal Accountabilities\u00a0\u00a0 \u00a0<\/p>\n<p>\tPlan and oversee daily production based on airline schedules and forecasted volumes<br \/>\n\tPlace and manage stock orders using system figures and recipe interpretation<br \/>\n\tEnsure effective stock management, including FEFO\/FIFO practices and participation in stock takes<br \/>\n\tMaintain accurate SAP system functions: stock reservation, production order confirmations, and stock reconciliation<br \/>\n\tCreate job cards and ensure output aligns with recipe specs and quality standards<br \/>\n\tMonitor extras, ensure sign-off and handover to the uplift team<br \/>\n\tLead daily meal tastings and ensure spec compliance (portion control, plating, etc.)<br \/>\n\tInnovate and contribute to the creation of new dessert items and baked products<br \/>\n\tLead and supervise a team of pastry and bakery staff\u00a0<br \/>\n\tSet and monitor performance targets aligned with production objectives, and review individual and team performance; address gaps and drive improvements<br \/>\n\tManage shifts, weekend standbys, and irregular hours as required<br \/>\n\tParticipate in recruitment, training, and mentoring of kitchen staff<br \/>\n\tDesign and implement effective shift schedules based on production plans and flight schedules<br \/>\n\tCoordinate with QC and stores to manage expiry dates and ingredient usage<br \/>\n\tEscalate deviations following proper procedures and ensure resolution<br \/>\n\tRespond promptly to customer queries and complaints<br \/>\n\tDrive R&amp;D efforts in pastries and introduce innovative offerings in line with airline and market trends<br \/>\n\tEnforce food safety and hygiene standards (HACCP, FSSC 22000)<br \/>\n\tComplete and submit CCP documentation and participate in internal food safety audits<br \/>\n\tEnsure use of protective clothing and hygiene practices<br \/>\n\tMonitor the implementation of SHEQ (Safety, Health, Environment, and Quality) policies<br \/>\n\tReport and investigate any safety incidents or deviations<br \/>\n\tAdhere to all company policies and legal obligations<br \/>\n\tEnsure full compliance with production protocols, food safety, and environmental standards<br \/>\n\tTake responsibility for minimizing production risks and implementing improvements<br \/>\n\tExecute additional duties as reasonably instructed by the Head Chef or senior management<\/p>\n<p>Qualifications &amp;
