\tTo provide the framework, tools, deployment methodology and support to all bakery staff and management to deliver sustainable improvement in product quality and bakery outputs whilst reducing the unit cost of manufacture. To implement and sustain process improvement, continuous improvement and manufacturing systems best practices.<\/p>\n
Minimum Requirements\u00a0\u00a0 \u00a0<\/p>\n
\tMaster Baker\/ AIB Certification\/ Theory of Baking Certification
\n\tQualified artisan will be beneficial
\n\tProduction\/Operations Management Qualification\/Food Science or Quality Qualification
\n\tPeople Management\/ Project Man\/ Continuous Improvement Qualification
\n\tThree years\u2019 experience in a similar role
\n\tSignificant production management experience in bread manufacturing
\n\tHighly proficient in bakery technology
\n\tDirect application of process optimisation and continuous improvement
\n\tTraining, assessing and moderating<\/p>\n

\nTo implement and sustain process improvement and process optimisation programmes.<\/p>\n
Process Optimisation<\/p>\n
\tThe following optimisation cycle will be managed to optimise the cost of manufacturing \u2013 identify process variables \u2013 analyse dependencies \u2013 test dependencies \u2013 reduce variability \u2013 standardisation (hand over to production team).<\/p>\n
Process Improvements<\/p>\n
\tThe following improvement cycle will be managed to improve the cost of manufacturing – process mapping – data collection – data analysis and data sorting – improvement opportunity identification \u2013 implement improvement methodology \u2013 standardisation (hand over to production team).<\/p>\n
Production Management Support<\/p>\n
\tTo support Bakery Production Managers with the process of baking a good quality loaf as per the formulated recipe and costs.
\n\tTo maximise plant availability, performance and quality rate (OEE) of bakery by applying process engineering techniques and tools.
\n\tTo optimise energy and utility usage, specific to baking.
\n\tTo train staff and management in bakery processes and optimisation techniques and to manage transfer of skills and competency assessment.<\/p>\n
To develop and maintain a repository of process and production information and documentation<\/p>\n
\tA repository shall be developed for process data and documentation.
\n\tThe process data will include technical process specifications and process flow diagrams.
\n\tInformation systems to support the process optimisation, process improvement and continuous improvement projects will be required.
\n\tProcess capability studies will be undertaken to identify process optimisation and process improvement projects.<\/p>\n
Manage continuous improvement programme for bakery<\/p>\n
\tMaintain a manufacturing scorecard and conduct benchmarking to drive continuous improvement
\n\tDevelop and sustain an OEE improvement programme
\n\tImplement and sustain a problem-solving methodology
\n\tImplement a visual performance management system at the bakery
\n\tDrive effective communication for continuous improvement programme
\n\tTo effectively implement projects by employing sound project management practises
\n\tTo effectively support bakeries with trial bakes and special baking projects.
\n\tSupport the food safety and quality management system deployment
\n\tConduct engineering and process research and development
\n\tGuide the formulation of the manufacturing strategy and equipment selection
\n\tEffective budgeting and cost control
\n\tImplement and sustain a mass balance process to manage inventory levels, raw and packaging material yields and mixing and baking yields to optimise costs.
\n\tIntroduce capacity planning and production scheduling to optimise the use of assets to meet service level and growth requirements.
\n\tImplement and sustain a waste reduction programme.
\n\tApply contract management to manage service providers.
\n\tConduct Process Audits and manage deviation of processes<\/p>\n
