The Butchery Manager is responsible for the leadership and supervision of the Butchery department within a PnP Corporate store. This function includes the planning, organizing, directing, motivating, controlling and providing practical operational support in the running of the Butchery in order to achieve the Butchery Division and the Pick n Pay\u2019s objectives.<\/p>\n
Minimum requirements<\/p>\n
\tMatric\/Grade 12
\n\tMinimum of 3 years butchery management experience
\n\tButchery qualification would be advantageous<\/p>\n

\n\tAbility to operate all the butchery equipment

Customer Service<\/p>\n
\tGive customers undivided attention when serving them to maximise customer satisfaction
\n\tDemonstrate product knowledge when assisting customers with butchery queries and\/or determining their needs to recommend products that fits their needs and desires<\/p>\n
Product Preparations<\/p>\n
\tAdhere to ingredient selection and method in strict accordance with the recipe manual
\n\tBreak the carcass into primal form to enhance efficiency during the final cutting of products in preparation for trade<\/p>\n
Merchandising<\/p>\n
\tAdhere to the butchery merchandising flow
\n\tKeep categories together when merchandising according to the plano-guide
\n\tClean and maintain the merchandise area to ensure its always neat, hygienic, and appealing to customers
\n\tMonitor on shelve availability and take corrective actions to address any possible overs and out of stocks<\/p>\n
Hygiene and Housekeeping<\/p>\n
\tMaintain clean as you go during production to avoid food safety risks
\n\tDeep clean post-production to avoid contamination and pest infestation
\n\tEnsure equipment is kept clean and in a good working condition
\n\tAdhere to safety procedure when operating equipment to avoid any occupational risks
\n\tCommunicate any equipment faults and abnormalities to the relevant manager
\n\tEnsure correct temperature control are adhered to preserve the product, avoid contamination and waste<\/p>\n
Administration<\/p>\n
\tAssist with all administration processed to ensure smooth running of the butchery
\n\tConduct stock take to calculate gross profit
\n\tGive input and maintain staff scheduling rosters to ensure adequate coverage during business peaks and valleys
\n\tPlace stock orders and ensure stock holding is sufficient to meet customer needs and reduce waste<\/p>\n
Sales and profitability<\/p>\n
\tEnsure product is available to promote sales and the achievement of budget
\n\tOversee the cutting of the carcass according to block test margin to ensure maximum profitability and good butchering standards are adhered to
\n\tPerform stock rotation to reduce and control waste
\n\tApply the cutting plan to minimize waste resulting from over ordering and over producing<\/p>\n
Leading Teams<\/p>\n
\tLead, monitor and coach direct reports and ensure effective management and utilization of employees
\n\tProvide employees with regular feedback and handle issues of discipline accordingly
\n\tKeep team updated on any new initiatives and changes pertaining to the department<\/p>\n
