{"id":31216,"date":"2026-03-04T16:02:49","date_gmt":"2026-03-04T16:02:49","guid":{"rendered":"https:\/\/jobs.dataaxisnode.com\/southafrica\/job\/executive-sous-chef-sun-city-fire-safety-officer-sun-city\/"},"modified":"2026-03-04T16:02:54","modified_gmt":"2026-03-04T16:02:54","slug":"executive-sous-chef-sun-city-fire-safety-officer-sun-city","status":"publish","type":"job_listing","link":"https:\/\/jobs.dataaxisnode.com\/southafrica\/job\/executive-sous-chef-sun-city-fire-safety-officer-sun-city\/","title":{"rendered":"Executive Sous Chef (Sun City) \n\n\n            \n\n            \n            Fire Safety Officer (Sun City)"},"content":{"rendered":"<p>Job Purpose<\/p>\n<p>Responsible for the management of the kitchen operations and team within an area of the business unit with specific regard to<\/p>\n<p>\tMaximizing revenue potential in specific outlets improving of standards of operation (including health, hygiene, safety and environmental standards)<br \/>\n\tProvide recommendations for innovative culinary products, enhancements and production<br \/>\n\tControl of kitchen operating equipment and stock control of kitchen spend and wastage<br \/>\n\tTeam management<br \/>\n\tImplementation of culinary operational efforts to achieve the unit\u2019s strategies and objectives.<\/p>\n<p>Key Performance Areas<\/p>\n<p>\tIn collaboration with the Executive Sous Chef, develop outlet objectives and deliverables in line with the culinary strategy<br \/>\n\tFacilitate the communication and implementation of culinary deliverables for the outlet<br \/>\n\tProvide clear delegation of authority and accountability for deliverables<br \/>\n\tManage and allocate people and operational resources<br \/>\n\tCommunicate plans relative to promotions and strategies to relevant staff and stakeholders within the unit<br \/>\n\tAlign plans with EE, SD and procurement transformation strategies which contribute towards BBBEE targets being achieved for the property\u00a0<br \/>\n\tPut in place staff scheduling and duty allocations to ensure coverage\u00a0<br \/>\n\tHandle shift briefings \/ handovers \/ shift reports\u00a0<br \/>\n\tManage the preparation of mise-en-place\u00a0<br \/>\n\tComplete opening and closing checklists<br \/>\n\tInteract and be present on the floor during service to ensure food quality and presentation in line with standards<br \/>\n\tHandle any special requests, special requirements, recommendations, concerns, resolution of complaints, issues<br \/>\n\texperienced during service etc.<br \/>\n\tManage staff appearance and kitchen appearance\/ functioning of equipment and systems for the outlet<br \/>\n\tReport and resolve any issues experienced<br \/>\n\tMonitor the cleanliness and hygiene of the kitchen before, during and after service<br \/>\n\tCompletes shift reports<br \/>\n\tProduce a 10-day \/ 20-day and monthly food cost report<br \/>\n\tContributes to month-end financial reports for the outlet (Budget vs revenue, food cost, etc.)<br \/>\n\tAudit food safety standards to ensure outlet compliance with relevant legislation regulations<br \/>\n\tConduct maintenance and hygiene inspections in all areas of the kitchen<br \/>\n\tMonitor health, safety, hygiene and environmental elements in the outlet<br \/>\n\tManage the control and storage of stock and operating equipment as per SOP for the outlet<br \/>\n\tInvestigate variances \/ discrepancies and take necessary action to correct<br \/>\n\tMonitor Culinary standards and processes<br \/>\n\tControl waste for the outlet<br \/>\n\tWork with internal stakeholders (maintenance, finance, HR, and security) to identify risk areas and address these<br \/>\n\tCollaborate with the Executive Chef to complete the planning for the Budget and forecasts for the outlet<br \/>\n\tMotivate and manage Capex requirements for the outlet<br \/>\n\tAuthorize spend in line with budget<br \/>\n\tFood recipe \u2013 All menu item food recipes to be documented, updated and captured into the system MC or IFS to ensure accurate food theoretical.<br \/>\n\tManage the conducting of accurate stock takes for the outlet in line with Company process.
