{"id":32121,"date":"2026-03-17T14:02:18","date_gmt":"2026-03-17T14:02:18","guid":{"rendered":"https:\/\/jobs.dataaxisnode.com\/southafrica\/job\/chef-de-partie-data-governance-lead-senior-data-platform-engineer\/"},"modified":"2026-03-17T14:02:38","modified_gmt":"2026-03-17T14:02:38","slug":"chef-de-partie-data-governance-lead-senior-data-platform-engineer","status":"publish","type":"job_listing","link":"https:\/\/jobs.dataaxisnode.com\/southafrica\/job\/chef-de-partie-data-governance-lead-senior-data-platform-engineer\/","title":{"rendered":"Chef De Partie \n\n\n            \n\n            \n            Data Governance Lead \n\n\n            \n\n            \n            Senior Data Platform Engineer"},"content":{"rendered":"<p>Job Description<\/p>\n<p>\tResponsible to supervise the day to day delivery of culinary products and team in a section of the kitchen with the objective of preparing, producing and presenting exceptional<br \/>\n\tfood products in line with Sun International\u2019s operational excellence standards, procedural compliance and customer experience expectations.<\/p>\n<p>Job Requirements<\/p>\n<p>Minimum Requirements (Education and Experience)<\/p>\n<p>\t2-Year Culinary Diploma or equivalent national qualification in culinary skills at Diploma level<br \/>\n\tMembership with South African Chef\u2019s Association and other relevant culinary accreditation<br \/>\n\t3 years culinary experience as a commis chef in a similarly graded hotel \/ restaurant kitchen environment<\/p>\n<p>Work Conditions and Special Requirements\u00a0<\/p>\n<p>\tAbility to work shifts that meet operational requirements<br \/>\n\tPhysically able to move operating equipment<br \/>\n\tHave an open attitude to perform similar functions in alternative outlets due to operational requirements<\/p>\n<p>Duties and Responsibilities include<\/p>\n<p>Kitchen Shift Supervision<\/p>\n<p>\tSupervise the preparations of mise-en-place and preparations for service<br \/>\n\tIs present in the kitchen during service to supervise and support the chefs in the creation<br \/>\n\tand presentation of quality culinary dishes food against guest orders and \/ or function requirements<br \/>\n\tIdentify any anomalies or issues with regards the appearance\/ functioning of equipment and systems within the specific kitchen section<br \/>\n\tCompletes opening and closing checklists and registers<br \/>\n\tSupport and assist team of chefs in the section with troubleshooting and to provide<br \/>\n\tprofessional standards and solutions<br \/>\n\tSupervise kitchen practices in line with standard operating procedures<br \/>\n\tSupervise the storage of operating equipment<br \/>\n\tSupervise health, safety, hygiene and environmental elements in the outlets<br \/>\n\tFollows up on any fault logging with the Technical departments and housekeeping until resolution<br \/>\n\tConduct stock control procedures and report on variances<br \/>\n\tIdentify coaching needs and facilitate on-the-job training as required<\/p>\n<p>Food Preparation<\/p>\n<p>\tPrepare mise-en-place, conduct checks and preparations for service in line with SOP<br \/>\n\tIdentify issues with regards own work station appearance and functioning of equipment and systems<br \/>\n\tCheck cleanliness of own section or station<br \/>\n\tSupervise the daily operation and preparation of food \/ menu items according to recipe<br \/>\n\tguidelines and preparation techniques \u2013 including preparation of vegetables, sauces,salads, cold starters; and hot dishes<br \/>\n\tControl food stock and food cost in own section<br \/>\n\tCheck food stocks &#8211; reporting on shortages, throwing out food that is close to expiry and<br \/>\n\tkeep the fridge areas in good order.<br \/>\n\tPeople Supervision<br \/>\n\tSupervise staff conditions of employment, e.g. attendance, absenteeism, leave, adherence to policies and procedures<br \/>\n\tIdentification of employee training needs<br \/>\n\tPerform on the job training and coaching to close developmental gaps and build succession for a talent pipeline within the outlet<br \/>\n\tManage employee relations within the department<br \/>\n\tStaff communication and motivation<br \/>\n\tPerformance contracting, reviews and development<br \/>\n\tAssist in providing resources and removing obstacles to performance<br \/>\n\tOnboarding of new staff members<\/p>\n<p>Operations Control<\/p>\n<p>\tSafe use and storage of operating equipment, operating expenses (gas, chemicals)<br \/>\n\tStorage and use of operating supplies (CONSUMMABLES, PACKAGING, CHEMICALS)<br \/>\n\tConduct food and equipment daily stock counts<br \/>\n\tReport on variances \/ discrepancies and take necessary action to correct<br \/>\n\tMonitor food costs (purchases related to revenue)<\/p>\n<p>Culinary Standards Supervision<\/p>\n<p>\tUnderstand and conduct all tasks in line with culinary standard operating procedures<br \/>\n\tBe aware of and comply with health, safety, hygiene and environmental regulations in the outlets<br \/>\n\tUse, store and clean operating equipment in line with specifications and safety regulations<br \/>\n\tParticipate in stock takes<br \/>\n\tConduct daily stock counts of bar smalls<br \/>\n\tResolve or report on any anomalies to the required standards<br \/>\n\tReport on any breakages at the end of the shift<br \/>\n\tHollow ware, kitchen OE and cutlery, vacuum sealers, gas burners, operating expenses,<br \/>\n\tPackaging<\/p>\n<p>Delivered Customer Experience<\/p>\n<p>\tInteract and be present on the floor during service to understand and assist clients with requests, special requirements, recommendations, concerns, resolution of complaints<br \/>\n\tMonitor standards and staff at the buffet: guest interaction on the floor to ensures all guests are treated with courtesy and respect at all times<br \/>\n\tUp skill staff to ensure that they are fully fluent in details of menu items, current promotions, business unit and product knowledge<br \/>\n\tHandle and resolve any guest special requests, queries or complaints<br \/>\n\tTake guest orders accurately at the buffet<br \/>\n\tPrepare food items for the guest and present in line with standards<\/p>\n<p>Technical Competencies<\/p>\n<p>\tOE usage and storage<br \/>\n\tCulinary Product Knowledge<br \/>\n\tCooking Methodology<br \/>\n\tLegislation \u2013 food safety standards &amp;
