We are seeking a hands-on and motivated Junior Cheesemaker to join our production team. This role offers an excellent opportunity for someone passionate about dairy processing to grow their technical skills in a dynamic manufacturing environment.<\/p>\n
Key Responsibilities
\nProduction Operations<\/p>\n
\tPrepare cheesemaking vats, pipelines, and equipment prior to production in accordance with sanitation and production standards.
\n\tReceive pasteurized milk and verify temperature, quality parameters, and volumes before production.
\n\tAccurately assemble ingredients including cultures, rennet, calcium chloride, and salt according to approved recipes.
\n\tMonitor and control cheesemaking processes including coagulation, curd cutting, stirring, cooking, draining, molding, and pressing.
\n\tOperate cheesemaking equipment including vats, pumps, curd cutters, presses, and brining systems.<\/p>\n
Process Monitoring<\/p>\n
\tMonitor critical process parameters including temperature, pH, coagulation time, and curd development.
\n\tConduct routine quality checks during production to ensure products meet specification.
\n\tMonitor brining processes and salt levels where applicable.
\n\tReport any deviations in process or product quality to the Production Manager immediately.<\/p>\n
Production Documentation<\/p>\n
\tRecord all production data including milk volumes, ingredients, temperatures, and process times.
\n\tComplete batch sheets and production records accurately to ensure full product traceability.
\n\tMonitor daily cheese yield and report any deviations or inefficiencies.<\/p>\n
Quality and Food Safety<\/p>\n
\tEnsure strict adherence to Food Safety Management Systems (HACCP, GMP, PRPs).
\n\tFollow hygiene protocols including correct use of PPE and sanitation procedures.
\n\tMaintain clean production environments and ensure equipment is cleaned and sanitized before and after use.
\n\tWork closely with Quality Control teams to ensure product compliance with specifications.<\/p>\n
Continuous Improvement<\/p>\n
\tWork closely with assistant cheesemakers and production staff to optimize production efficiency.
\n\tAssist in reducing raw material losses and improving cheese yield.
\n\tSupport production trials and product development when required.<\/p>\n
Requirements<\/p>\n
\t1\u20132 years\u2019 experience in a cheesemaking or dairy processing role.
\n\tGrade 12 qualification; a qualification in Food Technology, Dairy Technology, or Food Science will be advantageous.
\n\tKnowledge of HACCP, GMP, and food safety practices in a manufacturing environment.
\n\tBasic understanding of cheese fermentation and dairy processing principles.
\n\tAbility to follow recipes, specifications, and production instructions accurately.
\n\tGood communication and teamwork skills.
\n\tStrong attention to detail and ability to maintain accurate records.
\n\tBasic computer literacy (Microsoft Excel and production documentation).
\n\tAbility to work in a fast-paced production environment and work overtime when required.<\/p>\n
