role drives operational efficiency, team performance and ensures:<br \/>\n\tConsistent delivery of safe, high-quality and certified Halaal meals across all the channels<br \/>\n\tAdherence to customers\u2019 menu specifications<br \/>\n\tImplementation of food safety standards<br \/>\n\tAdherence to production timeline<br \/>\n\tThe Sous Chef roles supervises the culinary staff, ensures food quality and safety, managing stock levels and contributes \u00a0to the creation and execution of menus that meet customers\u2019 standards and specifications<\/p>\n<p>Principal Accountabilities\u00a0\u00a0 \u00a0<\/p>\n<p>\tLeads and supervises a team of chefs and kitchen assistants\u00a0<br \/>\n\tReviews team performance, addresses gaps, initiates corrective actions and drives improvements<br \/>\n\tSets and monitors performance targets in alignment with production targets<br \/>\n\tDevelops and implements effective shift schedules and supervises resources effectively<br \/>\n\tCompiles and submits daily, weekly and monthly productivity reports (such as wastage, absenteeism, deviations, job cards, etc)<br \/>\n\tParticipates in the recruitment, training and mentoring of kitchen staff<br \/>\n\t\u00a0Confirms menus and functions for the day to determine ingredients according to menu specifications and plan for staffing requirements<br \/>\n\tDelegates tasks effectively and manages the workflow across the Halaal kitchen section<br \/>\n\tTrains and mentors employees on Halaal compliance, food safety and correct handling procedures<br \/>\n\tPromotes as culture of religious respect, food safety discipline and operational excellence<br \/>\n\tSchedules and coordinates the daily activities and outputs for the Halaal kitchen<br \/>\n\tImplements effective production control in line with daily flight schedules and planning forecasts<br \/>\n\tMaintains accurate and adequate stock levels of Halaal ingredients and coordinates with Procurement timeously to avoid shortages<br \/>\n\tEnsures strict compliance with all Halaal food-production protocols<br \/>\n\tSupports the full production value activities in line with client specifications, box times and world class food safety standards while applying and implementing innovative production processes to ensure high production yields and business profitability<br \/>\n\tMonitors raw product yields regularly to ensure maximum product output according to raw material specifications and service level agreements with suppliers<br \/>\n\tPlaces stock orders on time using system-generated data<br \/>\n\tInterprets recipes to support bulk production in accordance with approved specifications<br \/>\n\tLeads daily tastings and compliance checks on portioning, plating and presentation<br \/>\n\tEnsures that all extras are signed off and handed over correctly to the uplift team<br \/>\n\tImplements effective stock rotation \/ stock management, stock takes and system requirements such as stock reservations, stock reconciliations and product confirmations<br \/>\n\tCreates job cards and ensures that outputs align with recipe specifications and quality standards<br \/>\n\tSupports the Research and Development department in identifying continuous developments and innovations in Halaal product development<br \/>\n\tLiaises with Quality Control and Stores to manage expiry dates and ingredient usage<br \/>\n\tReports deviations in line with approved procedures and ensures resolution thereof<br \/>\n\tConducts investigations into customer complaints received and responds promptly to customer queries and complaint<br \/>\n\tCompletes and submits all CCP documentation to Quality Assurance at the end of each shift<br \/>\n\tMonitors adherence to SHEQ systems and policies<br \/>\n\tMonitors and ensures full compliance with operational, safety, hygiene and security procedures<br \/>\n\tEnforces the use of hygiene practices and protective gear at all times<br \/>\n\tParticipates in internal and external food safety audits and provides feedback on non-conformances<br \/>\n\tConducts investigations into all safety incidents and ensures that all incidents are reported, documented and addressed in accordance with Air Chefs\u2019 protocols<br \/>\n\tIdentifies and monitors operational risks, including environmental hazards Identifies opportunities to minimise production risks and recommends improvements<br \/>\n\tmplements \u201cclean as-you-go\u201d principles and procedures in line with applicable food safety requirements<\/p>\n<p>Qualifications &amp; Experience\u00a0\u00a0 \u00a0<\/p>\n<p>\tNational Diploma (NQF level 6) in Hospitality \/ Professional Cookery \/ Culinary Arts \/ Kitchen Management<br \/>\n\t5 years\u2019 practical experience in a kitchen \/ catering \/ high volume food production environment<br \/>\n\t2 \u2013 4 years\u2019 experience in supervising a certified Halaal kitchen operation<br \/>\n\tExperience in food safety management<br \/>\n\tIn depth knowledge of Islamic dietary laws and Halaal food preparation practices<br \/>\n\tFood Safety and Hygiene Certification \u2013 HACCP level 1 or equivalent<br \/>\n\tValid driver\u2019s licence will be advantageous<\/p>\n<p>Knowledge and Skills\u00a0\u00a0 \u00a0<\/p>\n<p>\tLocal and \/ or international cuisine and dietary regulations<br \/>\n\tFood safety, hazard
