\nJob Purpose
\nThe Cost Controller will monitor and safeguard food and beverage costs by exercising adequate and prompt control over the recording of the cost of purchased food and beverages, and by checking the accuracy of menu pricing based on an analysis of the actual product costs of food and beverages served. This position focuses on minimizing wastage, preventing pilferage and theft, and maintaining cost controls across all outlets. Work closely with F&B, Purchasing, and Finance teams to identify and implement cost-saving measures.
\nSummary of Key Responsibilities:<\/p>\n
Verify supplier invoices, purchase orders and receiving procedures for accuracy.
\nPrepare detailed cost reports and analysis to support management decisions.
\nMonitor and control all costs associated with the hotel
\nInvestigate and resolve discrepancies such as lost postings.
\nPrepare and analyze financial statements, budgets, and forecasts
\nReview and reconcile invoices and purchase orders
\nEnsure compliance with internal policies and procedures
\nManage internal and external audits
\nPrepare daily and monthly F&B cost reports.
\nConduct variance analysis and communicate findings.
\nVerify all POS transactions including voids, discounts, and complimentary items.
\nEnsure all POS sales are accurately transferred to the PMS.
\nProduce departmental performance reports.
\nDevelop and implement cost control strategies
\nLiaise with vendors and suppliers
\nProvide training and guidance to staff on cost control
\nMonitor and report on budget performance
\nMaintain accurate financial records
\nDevelop and maintain cost control systems
\nProvide regular reports to management
\nConduct regular inventory checks and variance analyses.
\nVerify supplier invoices, purchase orders and receiving procedures for accuracy.

\nWork closely with F&B, Purchasing and Finance teams to identify and impliment cost-savings measures.
\nMaintain up-to-date recipe and menu costing in Fidelio and Opera Systems.<\/p>\n

Qualifications and Experience<\/p>\n
Diploma or Degree in Accounting, Finance or Business-related field.
\nMust have a minimum 4+ years experience in Cost Control within a 4- or 5- star hotel.
\nProven working experience in cost control in the hotel industry.
\nStrong analytical and reporting skills with keen attention to detail.
\nProficiency in accounting and POS systems
\nProficiency\u00a0in Fidelio, Opera and MS Excel will be a plus
\nAble to work independently with minimum supervision
\nGood Knowledge of spreadsheets and Word documents
\nKnowledge of material control software will be an advantage
\nMust be a member of ZICA<\/p>\n
