Plan and co-ordinate the smooth and efficient operation of the Stewarding section on a daily basis as per SOPs
 
Assist the HRM in conducting selection and recruitment of TMAssist the Executive Chef to carry out Performance Appraisal and to identify necessary training measuresKeep his superior informed about all unusual matters concerning any plans affecting his/her areaAct as a coachCommunicate to Executive Chef the training needs of the TM and conducts on the job trainingEnsure that discipline prevails within the team and communicates any disciplinary issues to Executive Chef / HR ManagerPromote and maintains effective interpersonal relationsEnsure that set ups and requirements are done as per events ordersEnsure that all delivered material are in perfect conditions and impeccably cleanedPrepare monthly rosters of TM whilst ensuring a proper manning during each shiftMonitor leaves in respective outletManage the outlet’s budget efficiently and effectivelyControl of expenses (Breakages, linen, materials, etc.)Monitor the outlet’s operation equipmentConduct monthly inventory on materials used in the outlet / VillasCheck and approves stores requisitions whilst ensuring par stock at the Outlet are maintainedSubmit at the end of each month breakage reports to Executive ChefEnsure respective TMs are operating as per Quality Management SystemEnsure respective TMs are operating as per S&H regulations and policiesConduct daily stewarding meetings and attend daily kitchen / F&B briefingPlan and organise daily requested activities in collaboration with all concernedEnsure that the correct detergents are being used in the right volumes in pot wash and the areas of manual dish washingEnsure that all other surfaces including light fittings are clean regularlyEnsure that all kitchen equipment is cleaned thoroughly immediately after useEnsure that dish washers and glass washes are operating to maximum efficiency and serviced periodicallyEnsure that waste for collection is stored in the prescribed containers/garbage room and kept under strict hygiene conditionsEnsure that waste is collected regularly from all areasInspect set ups, including service station before the opening/ensure that guests’ requests are properly followed
